Spicy Parsnip Soup

I think this means he liked it!


Serves 2 adults and one baby

Ingredients

1 tablespoon oil or butter
1 small onion
2-4 parsnips (depending on size)
2 cloves garlic
1-2 teaspoons medium curry powder (depending on taste)
500ml vegetable stock
a splash of milk

Method

Heat the oil or butter, add the onion and fry until soft
Add garlic and curry powder and fry a little more
Add parsnip and stock, bring to the boil and simmer for about 20 minutes, or until parsnip is soft
Remove from heat and blend using a stick blender until smooth.
Add milk until you have the thickness you want, and return to heat to warm through

Serve with bread and butter

Egg Fried Rice

A very quick and easy meal.

This recipe makes enough for 1 baby and 1 adult



Ingredients

90g easy cook rice
Sunflower or rapeseed oil (plus a dash of sesame oil if you fancy)
1/2 red onion
1/4 red pepper thinly sliced
1 carrot, finely sliced with the peeler
a few green beans or snow peas
2 eggs

Method

Put the rice on to boil
While it's boiling, heat the oil in a wok or pan, and start to gently fry the onions. Then add the pepper, carrot and beans.
When the rice is cooked, rinse and drain.
Add the eggs to the pan and mix them around with the veg, then quickly add the drained rice and mix well.
Cook for a further 2-3 mins

Serve out baby's portion, then add a dash of soy sauce to your own.

Beefy Base

I personally don't like beef, so it isn't something that BB is likely to try when we eat together. In the spirit of Baby Led Weaning and the idea of introducing as many foods as possible, I do want to give him the chance to like it himself. I have tried him with a slice of beef from the deli counter a couple of times but he was not impressed, so I thought I would give him a chance with mince in a cottage pie style base.

This recipe makes enough to be able to freeze 4 - 6 portions, depending on how much your baby eats.

You can serve the beefy base with mashed potato, baked potato, pasta or rice.


Tonight he had it with pasta. As you can see, it was greeted with approval. Another win for mummy!



Ingredients

200g Beef mince (I used low fat steak mince because it was on offer, but any mince will do as long as you dry fry it first and drain off the excess fat).
1 tbsp sunflower oil
1 tin chopped tomatoes
1 small onion, finely chopped
1 small carrot, grated
1/2 cup peas
1/2 cup low salt vegetable stock
2 cloves garlic, crushed
1 tsp mixed herbs
small pinch chili flakes

Method

I a medium size pan,  heat the oil and gently fry the onion. Add the carrot and garlic and fry for a further few mins.
At the same time, in a separate saucepan or frying pan, dry fry the mince until it turns brown.
Then add the tomatoes, peas, vegetable stock, herbs chili and the cooked mince to your first pan. Mix and simmer for about 20 mins.

Red Lentil and Sweet Potato Soup

At first, I thought that soup and Baby Led Weaning sounded like a bad combination, but it's actually great. Arthur, soon learned to dip his bread in the soup. It actually makes less mess than many meals we have tried. I also add a little baby pasta to left over soup for occasions when we will be eating out in places that are not so tolerant about mess. He is happy to be spoon fed this 'mixture' and eat it alongside 'clean' foods, like cucumber sticks.



Ingredients

1 tbsp oil for frying
1 medium onion
1 medium sweet potato (peeled and cubed)
1 small apple (peeled and sliced)
1 tsp medium curry powder
1/2 tsp ground coriander
1/2 tsp ground ginger
500ml low salt vegetable stock
60g red lentils
Small handful of fresh coriander leaves


Method

Finely chop the onion and fry gently in a large saucepan with the curry powder.
Add the vegetable stock.
Add the remaining ingredients, bring to the boil and then simmer until the sweet potato and lentils are cooked (about 20 mins)
Blend with a stick blender


Serve with toast fingers

Chicken and Mushroom Orzo Pasta



Serves 1 parent and 1 baby

Ingredients

75g Orzo (or other pasta if your baby prefers the larger pieces)
1 chicken breast
4 or five medium sized mushrooms
1 tbsp creme fraiche
1 tsp basil pesto
Garlic pepper to taste

Method
Cut the chicken into pieces (of a size preferred by your child) and cook in a frying pan
Once cooked, remove the chicken and add the mushrooms, fry gently until cooked
In a separate pan cook the orzo (or other pasta), when cooked drain and return to the pan
Add the rest of the ingredients and mix well.
The temperature my be about right for your baby right now, but you can heat a little for yourself if required

Pea and Mushroom Risotto



Serves parent and child

Ingredients

1 small onion, finely chopped
1tbsp oil suitable for frying (sunflower or rapeseed - not olive oil)
1 clove garlic
150g mushrooms, sliced
1 cup frozen peas
 500ml low salt vegetable stock
150g arborio rice
25g parmesan
a little butter


Method

Fry the onions until they start to become clear, add garlic
Add the mushrooms and continue to gently fry
In a separate pan heat the vegetable stock
Add the rice to the onions and mushrooms and stir well to coat all the rice in oil, add a little more oil if necessary
Add some of the stock to cover the rice, and then add the peas. Cook gently.
Stir continuously until all the stock is absorbed, then add little more stock, and do the same again.
Keep going with this until the rice is cooked and the food takes on a creamy appearance.
Turn off the heat and add the butter and parmesan and mix well.


Note
Although the constant stirring may make you think risotto is not a dish to cook when looking after a baby it actually works well. Just turn off the ring if you have to leave for a while and you'll find that when you come back the rice has absorbed a little more stock. I actually find the slower it's cooked the better it tastes!

Wholemeal Banana Bread



Ingredients


3-4 bananas (depending on size)
1/3 cup butter
1 large egg
1 cup sugar
1 tsp vanilla extract
1 tsp baking powder
1 1/2 cups wholemeal plain flour

Method
In a large mixing bowl, mash the bananas using a potato masher
Melt the butter in the microwave and add to the bananas - mixing in with a wooden spoon
In a separate bowl, beat the egg, then add the sugar, baking powder and vanilla and mix well
Add this mixture to the banana and butter mixture and mix with the wooden spoon
Lastly add the flour and fold in until well mixed
Put the mixture into a greased 2lb loaf tin and bake at 175°C for about 50 mins (slightly longer if not using a fan oven)
Turn out and leave to cool on a cooling rack
